Highland Park 23 Year Old Single Cask by Signatory (Cask 572)
Tasting Note by Our Malt Master
Want something different than the usual Highland Park? Try this wine treated butt matured whisky created by them. Rarely used for aging whisky, it is even more rare for Highland Park to use them, this experimental cask is definitely something special.
AVB: 55.7
Maturation: Wine Butt
Chill-Filtration: Yes
Nose: Very harsh and aggressive at first. After adding more than a few drops of water, the aggressiveness finally tone down a bit. Lemon tart and sour orange candy, very subtle smoke, almost none unless you dig for it. Notes like raisin, fig and tamarind can also be found in the back.
Palate: Sweet and savoury. You can definitely taste the leather and chocolate in the mid-palate. Some sweet oakiness follow through to the finish.
Finish: Delicious and sweet winter spice come out at during the finish. Some sweet brown sugar and toffee show through also. Medium and warm finish. A very special Highland Park indeed.
