The Speyside

​Situated around the northwestern part of Scotland, the Speyside region is defined as the area around the river of Spey. In a technical view, the Speyside region is actually part of Highland. Famous for its sherry cask whisky, it is the home of many famous distilleries such as The Macallan and Balvine and a further 50+ distilleries.

​Other than its famous sweet and chocolaty flavoured whisky using sherry casks, this region also produces some of the best lighter and honeyed flavoured whiskies from bourbon cask creating a range of selection for the more experienced drinker.

Aberlour 12 Double Cask

The 12 year-old expression is a fine example of how the distinctively crisp, citrus character of Aberlour's raw spirit is deftly softened by double cask maturation. Traditional oak and seasoned Sherry butts are both used to great effect, as the mellowed spirits within are combined to deliver a subtly balanced flavour.

Nose: Soft and rounded, with fruity notes of red apple.

Palate: A fine sherried character, balanced with rich chocolate, toffee, cinnamon and ginger spiciness.

Finish: Warming and lingering - sweet and slightly spicy.

Aberlour A'Bunadh Batch 54

With each batch specially crafted, Aberlour A'bunadh is a unique cask strength whisky that has achieved cult status among whisky connoisseurs. The result is a heavier, creamier single malt than most have ever experienced - memorably flavoursome, with an intense raisin character.

Maturation: Oloroso Sherry
Chill-Filtration: No

Nose: Terrific aromas of allspice, praline and spiced orange, in harmony with deep notes of Oloroso Sherry.

Palate: Orange, black cherries, dried fruit and ginger, spiked with dark bitter chocolate and enriched with lingering Sherry and oak. Superlatively full bodied and creamy.

Finish: Robust and long lasting, with bittersweet notes of exotic spices, dark chocolate and oak.

Benromach 10 Year Old

Nose: Rich sherry with fruit & nut chocolate, delicate spice, green apples, malty biscuit and a touch of light peat smoke. Nutty with a touch of charred oak and malt, and there's also some fancy pineapple and kiwi.

Palate: Juicy raspberries and brambles, sherry, creamy malt and a light peat.

Finish: Savour the succulent mouth coating and taste the toasted malt, delicate peat smoke and lingering sweet sherry.

Balvenie 12 Year Old Doublewood

The Balvenie DoubleWood 12 year old single malt whisky gains its distinctive character from being matured in two wood types.The whisky has spent at least 12 years in maturation and then transferred to large oak vessels called 'tuns' for 3-4 months to allow the whiskies to 'marry'.

Nose: Sweet fruit and Oloroso sherry notes, layered with honey and vanilla.

Palate: Smooth and mellow with beautifully combined flavours ~ nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry.

Finish: Long and Warming.

Glencraig 38 Year Old Single Cask by Signatory (Cask 4254)

Tasting Note by Our Malt Master


Glencraig is actually a brand name rather than a distillery. It is the product created by Glenburgie using a Lomond Still. With only 188 of them in the world, this might actually be the only chance you can get a taste of it with us.

Maturation: Bourbon Barrel

Chill-Filtration: Yes


Nose: With a few drops of water, the whisky burst open like a fruit basket. Lemon, lime, white grape, spring flower, sugar soaked gingko and some honey in the background, this whisky is the perfect example of what you can smell in a spring garden.


Palate: More fruit, lemon, pear, honeysuckle brown sugar, smooth and comfortable. A very juicy dram indeed.


Finish: Long and rich, some oak come out at the background, coffee and caramel zip in little by little. One that you should savor.

Glenfarclas 15 Year Old

We bottled this at 46% simply because my grandfather preferred it at this strength. It's still a family favourite. This is perfect for single malt enthusiasts.

Nose: Complex, sherried, light butterscotch aroma, with a hint of dried fruit.

Palate: Full bodied with a superb balance of sherries sweetness and malty tones.

Glenfiddich 12 Year Old

Carefully matured in the finest American oak and European oak sherry casks for at least 12 years, it is mellowed in oak marrying tuns to create its sweet and subtle oak flavours. Creamy with a long, smooth and mellow finish.

Nose: Distinctively fresh and fruity with a hint of pear. Beautifully crafted and delicately balanced.

Palate: Characteristic sweet, fruity notes. Develops into butterscotch, cream, malt and subtle oak flavours.

Glenfiddich 15 Year Old

Its warm, spicy flavours are transformed with the alchemy of the Solera Vat. Aged in European oak sherry casks and new oak casks, the whisky is mellowed in our unique Solera Vat, a large oak tun inspired by the sherry bodegas of Spain and Portugal.

Finish: Satisfyingly rich with lingering sweetness.

Glen Moray 12 Year Old

Aged in the finest American oak, there's a hint of toastiness to this elegant malt, a wonderfully balanced whisky with a subtle sweetness. A sublime marriage of summer fruits and mellow vanilla, it's intended to be savoured and enjoyed.

Nose: Rich, sweet, and floral with notes of vanilla toffee, berry fruits and freshly-cut herbs.

Glenisla 36 Year Old Single Cask by Signatory (Cask 19603)

Tasting Note by Our Malt Master


This is a extremely rare experimental peated malt by the more know distillery Glenkeith (although it is quite underrated). Created solely for blending purpose originally, this cask had slip out of their finger and bottled by Signatory for us to enjoy. Try it while it is available, this is a very had malt to find.


AVB: 43.3

Maturation: Hogshead

Chill-Filtration: Yes


Nose: Apple juice overwhelm at first. It smell like the cough medicine you get from the doctor (if you know what I mean). Some fire wood scent came out from time to time. With a splash of water, it bring out more apple, pear, mirabelle, mint, hay straw, yogurt and cream soda favour. Very juicy and appetising.


Palate: This is a dram that you need time to decipher. Lemon, fermented malt, something like a light beer, cedar wood, paperboard and some goat milk cheese (did I just say I tasted cheese in a whisky...). This is a very very strange dram but a very fun one.


Finish: Very short for a 36 year old whisky. Yogurt, cedar and that weird cheese note last till the end. If you are bored with your go-to whisky, try this one out, I guarantee you have never ever taste something even remotely similar before.

Linkwood 28 Year Old Single Cask by Signatory (Cask 4538)

Tasting Note from Our Malt Master


Rarely seen with original bottling, this distillery is one of the more mysterious ones out there. Own and operated by Diageo's, it is often use for blending purpose by Jonnie Walker and White Horse. If you are nosing this dram and it remind you of some smoky blend you tried before, don't be surprise!


AVB: 53.4

Maturation: Hogshead

Chill-Filtration: Yes


Nose: Bold, meaty and some bacon smoke. It definitely smell like some wood smoke bacon is trying it best to hide inside this dram. Meanwhile, you also get a smell from the cigar lounge with leather chair around you. At the back, you can also sense a hint of fruit.


Palate: A very robust and full-body dram. Spicy, leathery, meaty and definitely some peat smoke. Strong Medicainal note complementing by some leather and black paper bursting open in your mouth.


Finish: A very long finish. Residue smoke from burning fire, bamboo cane sweetness infused with some oak in the end.
